Like most other whole grains, sorghum boasts im­pres­sive nu­tri­tional con­tent, adding a great dose of pro­tein, iron, B vi­ta­mins, and di­etary fiber to recipes. Sorghum flour is also high in an­tiox­i­dants like phe­no­lic com­pounds and an­tho­cyanin, which can help re­duce in­flam­ma­tion and lower free rad­i­cal dam­age.
