“Gourmet” is a word sel­dom as­so­ci­ated with the ham and cheese sand­wich. It’s one of the most typ­i­cal dishes, bring­ing to mind func­tional, home­made fare rather than stylish Mediter­ranean street food. But at this four-month- old Ital­ian joint, it’s the lat­ter ver­sion you’ll find. In­stead of overly briny pic­nic ham, pro­cessed cheese and the to­ken let­tuce leaf, the piadina boasts the lux­u­ri­ously flavour­some combo of parma ham, moz­zarella and ru­cola (rocket) leaves. Un­like most cheap su­per­mar­ket va­ri­eties, parma ham does not con­tain any ni­trate preser­va­tive. An Ital­ian study also found that the cur­ing process of this meat splits its long- chain pro­teins into smaller pep­tides, eas­ing its ab­sorp­tion by our bod­ies.
