“Gourmet” is a word seldom associated with the ham and cheese sandwich. It’s one of the most typical dishes, bringing to mind functional, homemade fare rather than stylish Mediterranean street food. But at this four-month- old Italian joint, it’s the latter version you’ll find. Instead of overly briny picnic ham, processed cheese and the token lettuce leaf, the piadina boasts the luxuriously flavoursome combo of parma ham, mozzarella and rucola (rocket) leaves. Unlike most cheap supermarket varieties, parma ham does not contain any nitrate preservative. An Italian study also found that the curing process of this meat splits its long- chain proteins into smaller peptides, easing its absorption by our bodies.
