0-2 MIN­UTES

Rich, tangy flavour in the mi­crowave? You bet. Pop the pork in Tup­per­ware with our mari­nade and leave to in­fuse all morn­ing in the of­fice fridge, ad­vises chef Michael Wig­nall of Gi­dleigh Park Restau­rant.

2-5 MIN­UTES

When you’re ready to feast, shred the pork with a knife and fork to achieve a “pulled” con­sis­tency. Blast it, with the mari­nade, for two min­utes in the mi­crowave. Mean­while, chop up the let­tuce.

5-7 MIN­UTES

Com­bine the pork, mayo, bar­be­cue sauce and let­tuce. Stuff it in a brioche bun, or save your­self 30g of carbs by wrap­ping it in the larger outer leaves of the let­tuce, for punchy flavours with zero post-lunch lethargy.
