A Se­same and Cilantro Dip for the BBQ Chicken

Mince 2 large gar­lic cloves and mix in

cup lime juice, cup palm sugar, 2 tsp Thai sweet chilli sauce, 1 tbsp fish sauce and 1 tbsp se­same oil in a saucepan and bring it to the boil. Lower the heat and sim­mer for 10min un­til it thick­ens, stir­ring oc­ca­sion­ally. Re­move from heat and stir in 30g chopped co­rian­der. Serve warm with the chicken.
