A Sesame and Cilantro Dip for the BBQ Chicken
Mince 2 large garlic cloves and mix in
cup lime juice, cup palm sugar, 2 tsp Thai sweet chilli sauce, 1 tbsp fish sauce and 1 tbsp sesame oil in a saucepan and bring it to the boil. Lower the heat and simmer for 10min until it thickens, stirring occasionally. Remove from heat and stir in 30g chopped coriander. Serve warm with the chicken.
