13 FRESH PRAWNS WITH PEPES SAUCE (UDANG PEPES)
INGREDIENTS 2 eggs, beaten 2 stalks spring onions, green parts only
cup curry leaves 5 cloves garlic, chopped 1 tbsp salt 12 tiger prawns 1 banana leaf, wiped clean DIRECTIONS 1 Mix the eggs, spring onions, curry leaves, garlic and salt in a bowl. Set aside. 2 Place prawns on the banana leaf laid on a large piece of aluminium foil. Raise the edges of the foil to make a bowl. 3 Pour the egg mixture over the prawns. Cook them in a hot steamer for 7min. 4 Transfer to an oven preheated to 180 deg C and bake for 15min.
