IN­GRE­DI­ENTS 2 eggs, beaten 2 stalks spring onions, green parts only

cup curry leaves 5 cloves gar­lic, chopped 1 tbsp salt 12 tiger prawns 1 ba­nana leaf, wiped clean DI­REC­TIONS 1 Mix the eggs, spring onions, curry leaves, gar­lic and salt in a bowl. Set aside. 2 Place prawns on the ba­nana leaf laid on a large piece of alu­minium foil. Raise the edges of the foil to make a bowl. 3 Pour the egg mix­ture over the prawns. Cook them in a hot steamer for 7min. 4 Trans­fer to an oven pre­heated to 180 deg C and bake for 15min.
