IN­GRE­DI­ENTS For the dress­ing:

torch ginger bud*, shaved 4 tbsp shrimp paste 4 tbsp sugar 4 tbsp chilli sauce 50ml sour plum sauce 1 tbsp oys­ter sauce DI­REC­TIONS 1 Mix all the in­gre­di­ents for the dress­ing and set aside. 2 Pound the ribs with a mal­let. Sea­son with the salt and sugar and set aside for 30min. 3 Dust the ribs with the flour and deep­fry un­til golden. Drain, pour the dress­ing over and toss. 4 Mix in the fruits and top with the peanuts. 250g pork ribs tsp salt tsp sugar 3 tbsp plain flour Veg­etable oil, for deep-fry­ing pork ribs mango, diced dragon fruit, diced 2 slices hon­ey­dew, diced cup grapes cup grated peanuts *Com­monly used in ro­jak dress­ing and Per­anakan cook­ing, this pinkish bud of the red ginger plant adds a oral fra­grance to dishes. It can be bought from wet mar­kets.
