21 SLICED FISH IN XO SAUCE
INGREDIENTS 400g fish (grouper or snapper) slices 1 tsp salt 1 tsp sugar 2 tsp cornflour Vegetable oil, for blanching fish slices 8 slices ginger 2 tbsp XO Sauce red bell pepper, sliced yellow bell pepper, sliced 12 asparagus, trimmed and sliced DIRECTIONS 1 Season the fish with the salt and sugar. Dust with cornflour. 2 Blanch them in hot oil and set aside. 3 Stir-fry the ginger, XO sauce, bell peppers and asparagus for 3min. Add the fish and mix well.
