By For­est Leong, food con­sul­tant at Tan­ger­ine • Soak 1 tbsp dried basil seeds* in cold wa­ter

for 30min.

• Halve a ripe av­o­cado. Re­move the seed, scoop out the flesh and blend it with 800ml wa­ter and 1 tbsp honey, un­til smooth. Sieve the puree, then di­vide into 10

small glasses.

• Top each with a scoop of choco­late ice cream and sprin­kle over some of the

soaked basil seeds.
