Every mouthful of the signature Smoked Tomato Soup ($8) is a rich burst of sweet, tangy and smoky. The recipe is so prized that the chef declares he’ll share any of his recipes but this.
It looks brown and sloppy, but dig into A Bunch of Bangers ($20) and you won’t be disappointed. Served in a puddle of caramelised onion gravy, the veal, garlic pork, and Cumberland sausages are spectacular with their crusty bed of bubble and squeak (fried potatoes and cabbage).
