All Chook Up
Whipping up chicken rice is easy-peasy – all you need are rice and a premix. RACHEL XIE made four pots of this local favourite to find the most authentic.
PRIMA TASTE FRAGRANT HAINANESE CHICKEN RICE PASTE
$1.95 Full of avour from the garlic and ginger in it, this premix stood out. The rice turned out moist, uffy and tasted like it’d been cooked in chicken stock. Some found it too salty, but it was the closest to what you’d get from a chicken rice stall.
NEW MOON PREMIUM HAINANESE CHICKEN RICE PASTE
$2.95 Go for this if you like your chicken rice garlicky, although we found that it was too overpowering – testers couldn’t taste much chicken avour in the rice. The grains also turned out slightly gummy instead of uffy.
ASIAN HOME GOURMET SPICE PASTE FOR SINGAPORE HAINANESE CHICKEN RICE $2.60 This paste gave the rice a distinct avour of pandan leaves and lemongrass – not quite authentic, but very fragrant. We recommend adding another half-cup of water to the amount given in the instructions, as the rice turned out dry and almost basmati-like.
SINGLONG HAINANESE CHICKEN RICE MIX $1.80 This tasted like a more toneddown version of the Prima Taste pre-mix. It’s not as avourful, but at least we didn’t get garlic breath after eating the rice! For a stronger avour, reduce the amount of rice and water by half.
