Whip­ping up chicken rice is easy-peasy – all you need are rice and a pre­mix. RACHEL XIE made four pots of this lo­cal favourite to find the most au­then­tic.

PRIMA TASTE FRAGRANT HAINANESE CHICKEN RICE PASTE

$1.95 Full of avour from the gar­lic and gin­ger in it, this pre­mix stood out. The rice turned out moist, uffy and tasted like it’d been cooked in chicken stock. Some found it too salty, but it was the clos­est to what you’d get from a chicken rice stall.

NEW MOON PRE­MIUM HAINANESE CHICKEN RICE PASTE

$2.95 Go for this if you like your chicken rice gar­licky, al­though we found that it was too over­pow­er­ing – testers couldn’t taste much chicken avour in the rice. The grains also turned out slightly gummy in­stead of uffy.

ASIAN HOME GOURMET SPICE PASTE FOR SIN­GA­PORE HAINANESE CHICKEN RICE $2.60 This paste gave the rice a dis­tinct avour of pan­dan leaves and lemon­grass – not quite au­then­tic, but very fragrant. We rec­om­mend adding another half-cup of wa­ter to the amount given in the in­struc­tions, as the rice turned out dry and al­most bas­mati-like.

SINGLONG HAINANESE CHICKEN RICE MIX $1.80 This tasted like a more toned­down ver­sion of the Prima Taste pre-mix. It’s not as avour­ful, but at least we didn’t get gar­lic breath af­ter eat­ing the rice! For a stronger avour, re­duce the amount of rice and wa­ter by half.
