ANOLON NOUVELLE COPPER 30CM STIR-FRY WOK $299, from major department stores USING IT The second-heaviest of the lot, its weight and smooth stainless steel handle made it hard to lift to tip out the food. I also wished it had higher walls to reduce oil splatter. But because it doesn’t heat up too quickly, the chances of overcooking food are lower. PERFORMANCE The good: It took hardly any effort to scrape off omelette residue from the non-oiled wok, the fish was cooked to tender perfection, and the veggies didn’t wilt too quickly and remained crunchy. The not-so-good: The rice cooked in it was the least fragrant out of all the woks. VERDICT Expect little wok hei flavour from this hefty one that’s hard to handle.
