Light, yet creamy and cheesy enough – that’s what we were look­ing for in these Ja­panese cheese­cakes.

1 SNAF­FLE’S CHEESE CATCH CAKES $19.80 for a box of eight, from Snafes, #B2-56 Plaza Sin­ga­pura, tel: 6884-6077 and #B2-K2 Be­dok Mall, tel: 6844-9390 This bite-sized cheesecake was more but­tery than cheesy, more dense than fluffy. It was so soft that it crum­bled as we pushed a fork through. But­ter-cake fans would like its meltin-the-mouth creami­ness, but as a cheesecake, it lacked the req­ui­site cheesi­ness. 2 UN­CLE TETSU JA­PANESE CHEESECAKE $9.90, from Un­cle Tetsu Cheesecake, #B4-35 Ion Or­chard, tel: 9871-2221 While soft, this cheesecake was denser than the rest in the line-up. It wasn’t overly sweet, but we tasted more eggs and milk than cheese. 3 FI­ESTA JA­PANESE CHEESECAKE $12.80 ( large), $7.80 (medium), $3.80 (small), from Ichiban Sushi, #06-05/06 Plaza Sin­ga­pura, tel: 6837-0113; Ichiban Boshi, #02-13 Ngee Ann City, tel: 6735-1816 and Kuriya Ja­panese Fresh Fish Mar­ket, #B1-07 Great World City, tel: 6836-4910 Smooth, fluffy and moist, this was the unan­i­mous favourite. It wasn’t over­pow­er­ingly cheesy or creamy and had just the right level of sweet­ness. It had a slightly cit­rusy flavour, which made it quite re­fresh­ing. 4 JO­HAN PARIS MINI CHEESECAKE $3.50 for 100g, from Jo­han Paris, #B2-01 West­gate, tel: 6465-9926 Vastly dif­fer­ent from the rest, these mini-cheese­cakes were dry with a brownie-like tex­ture. With their heavy cream-cheese cen­tres and a slightly tangy af­ter­taste, they were more like Amer­i­can cheesecake. Some had a slightly burnt flavour. 5 BREAD­TALK JA­PANESE CHEESECAKE $8.80, from Bread­talk We liked the light, spongy and moist tex­ture, which was like that of chif­fon cake. How­ever, the mild cheese flavour did not make much of an im­pres­sion.
