IN­GRE­DI­ENTS 80g broc­coli flo­rets A dash of salt 1 tsp sugar 1 litre cooking oil, plus 1 tbsp more 200g salmon, cut into 3cmx3cm pieces 6 tbsp wa­ter 3 tbsp light soya sauce 1 tbsp fish sauce 1 tbsp minced gar­lic 100g white radish (daikon), diced 30g dried shrimp A dash of sesame oil 30g spring onions DI­REC­TIONS 1 Bring a pot of wa­ter to the boil. Add the broc­coli, salt and tsp sugar, and boil for about 1min. Drain the broc­coli and trans­fer to a serv­ing plate. 2 Heat the cooking oil over medium heat. Add the salmon and cook for 8min. Re­move from heat, and plate it with the broc­coli. 3 Mix the wa­ter, light soya sauce, fish sauce, and tsp sugar in a pan and sim­mer over low heat for 1min. Re­move from heat and pour into the plate with the broc­coli and salmon. 4 Clean the pan and heat the re­main­ing 1 tbsp oil. Fry the gar­lic un­til fra­grant. Add the white radish, dried shrimp and sesame oil, and stir-fry for 1min. 5 Top the salmon with the stir-fried in­gre­di­ents. Gar­nish with spring onions and serve.
