SALMON CONFIT WITH JAPANESE RADISH IN SOYA SAUCE

INGREDIENTS 80g broccoli florets A dash of salt 1 tsp sugar 1 litre cooking oil, plus 1 tbsp more 200g salmon, cut into 3cmx3cm pieces 6 tbsp water 3 tbsp light soya sauce 1 tbsp fish sauce 1 tbsp minced garlic 100g white radish (daikon), diced 30g dried shrimp A dash of sesame oil 30g spring onions DIRECTIONS 1 Bring a pot of water to the boil. Add the broccoli, salt and tsp sugar, and boil for about 1min. Drain the broccoli and transfer to a serving plate. 2 Heat the cooking oil over medium heat. Add the salmon and cook for 8min. Remove from heat, and plate it with the broccoli. 3 Mix the water, light soya sauce, fish sauce, and tsp sugar in a pan and simmer over low heat for 1min. Remove from heat and pour into the plate with the broccoli and salmon. 4 Clean the pan and heat the remaining 1 tbsp oil. Fry the garlic until fragrant. Add the white radish, dried shrimp and sesame oil, and stir-fry for 1min. 5 Top the salmon with the stir-fried ingredients. Garnish with spring onions and serve.
