ORANGE MAYO SALMON BALL

INGREDIENTS For the orange mayo sauce: 4 tbsp mayonnaise 1 tbsp condensed milk 4 tbsp orange squash 2 tbsp cooking oil A dash of salt 1 egg yolk, beaten 200g salmon, cut into 1cmx1cm cubes 1 tbsp potato starch Oil for deep-frying DIRECTIONS 1 Combine all the ingredients for the orange mayo sauce in a bowl, and mix well. 2 Rub the cooking oil, salt and egg yolk over the salmon, and coat evenly with potato starch. 3 Deep-fry the salmon until crispy. Remove from heat, and drain the oil. 4 Transfer to a plate, drizzle with orange mayo sauce to serve.
