IN­GRE­DI­ENTS For the or­ange mayo sauce: 4 tbsp may­on­naise 1 tbsp con­densed milk 4 tbsp or­ange squash 2 tbsp cooking oil A dash of salt 1 egg yolk, beaten 200g salmon, cut into 1cmx1cm cubes 1 tbsp potato starch Oil for deep-fry­ing DI­REC­TIONS 1 Com­bine all the in­gre­di­ents for the or­ange mayo sauce in a bowl, and mix well. 2 Rub the cooking oil, salt and egg yolk over the salmon, and coat evenly with potato starch. 3 Deep-fry the salmon un­til crispy. Re­move from heat, and drain the oil. 4 Trans­fer to a plate, driz­zle with or­ange mayo sauce to serve.
