The restau­rant is al­ways full, so make sure you make reser­va­tions weeks in ad­vance. De­gus­ta­tion din­ners here may also take up to four hours, so it’s best to book an ear­lier time slot if you don’t want to fin­ish in the wee hours of the morn­ing.

The amuse bouche of dried onion and sea­weed chips is thinly sliced and served beau­ti­fully in dried brown twigs.

For the pure dish, it’s an as­sort­ment of seafood such as oys­ters topped with chicken, dec­o­rated with seaweeds and served on a stone plate.
