While Serge has added a whole slew of à la carte shar­ing dishes to its reper­toire, the beloved Chef’s Menu is still avail­able at HK$850 per per­son.

Fresh ra­zor clams are del­i­cately perched on a shal­low dish and topped with milky bur­rata, fresh pear and wild herbs.

Pi­geon is served dar­ingly rare, sea­soned à point with a thin, crisp skin; the cock­les, sam­phire and jus seal the deal.
