The sig­na­ture golden-stuffed crab shell fea­tures sweet shell­fish, and the top­ping is crisp and non-greasy.

The wok-seared cod fish with gar­lic, pre­served olives and herbs has the aro­matic kiss of fresh shiso leaves, com­ple­ment­ing the del­i­cate fish and pun­gent sea­son­ings.

Served dra­mat­i­cally un­der a bell jar which holds a plume of dry ice, the chilled mango cream with sago and pomelo is as the­atri­cal as it is de­li­cious.
