Chef Pepe, for­mer head chef of celebrity restau­rant Santi, is at the helm of this restau­rant that of­fers dishes made strik­ing by the fu­sion of Span­ish and Ja­panese in­gre­di­ents.


Ask for “the other” wine list for a se­lec­tion of tro­phy wines. The cold capellini with sakura ebi is a peren­nial favourite. This dish comes with a mea­sured dol­lop of Hokkaido uni that adds umami to the pasta with­out over­pow­er­ing it. The suck­ling pig is com­mon in most Span­ish restau­rants in Sin­ga­pore, but BAM! makes sure this sta­ple is any­thing but or­di­nary. This dish is served crisp and flavour­ful; the meat is ten­der and suc­cu­lent. Guests are also en­cour­aged to try the kam­pong egg, baby so­tong, and chorizo dish, which uses a per­fectly sous-vide egg to coat and en­hance the flavours.
