Upping the ante, the culinary masters behind this speciality restaurant decided to use live Alaskan king crab. And, as it turned out, the crab’s juicy, sweet and firm meat was the ideal complement to its white pepper sauce’s unique blend of spices. This crafty balance of sweet, savoury and spicy is also behind the success of its other famous crab dish, the popular chilli crab, best savoured with an order of steamed, or better yet, deep-fried man tou. Other exotic seafood dishes that have stood the test of time include Long Beach Seafood’s golden stripe live lobster and its live geoduck sashimi with superior stock steamboat. Prepared following a recipe that was created in 1991, the golden stripe live lobster is a hot favourite with regulars who love the crustacean’s crisp texture and natural sweetness. Those who prefer the pure flavours of raw seafood can opt for the live geoduck sashimi, though it is also served with a tasty superior stock to gently blanch the geoduck or, should guests prefer, air-flown live Australian lobster sashimi. Whatever the craving, this crowned king of Singapore’s seafood scene is a near irresistib­le calling for true lovers of the cuisine.
