MANGO KULFI

Prep 15 mins • Serves 8

1/ 3 cup hot milk • 3 strands saf­fron ( see tip) • 2 cups mango puree ( see tip) • 395 g can sweet­ened con­densed milk • 1½ cups thick­ened cream • ½ cup ic­ing su­gar • Chopped pis­ta­chios, to serve 1 In a small jug, com­bine milk and saf­fron. Set aside 5 mins. 2 In a medium bowl, com­bine saf­fron milk, mango puree and con­densed milk. 3 In a bowl, us­ing an elec­tric mixer, beat cream and ic­ing su­gar to­gether un­til soft peaks form. Fold mango mix­ture through. 4 Di­vide mango mix­ture be­tween eight ½-cup freezer-safe ser ving glasses. Freeze 3 hours or un­til set. 5 Re­move from freezer 5 mins be­fore ser ving. Sprin­kle kul­fis with chopped pis­ta­chios to ser ve.
