THE ZEN WAY

“Plain rice and pick­led vegeta­bles are al­ways served as part of a meal – in the Zen tra­di­tion, monks use the tea and pick­led vegeta­bles to clean the rice bowl af­ter fin­ish­ing their meal.”

EV­ERY­THING IN ITS PLACE

“In a tra­di­tional Ja­panese meal, rice is placed on the left and the soup on the right. The left side in­di­cates a higher po­si­tion than the right side, fol­low­ing the tra­di­tions of the im­pe­rial court.”

YIN AND YANG PLATING

“The Yin and Yang (Shadow and Shine) prin­ci­ples ap­ply to tra­di­tional Ja­panese cui­sine: Square plate = Shadow, round plate = Shine; even num­ber = Shadow, odd num­ber = Shine. So for a square plate, serve an odd num­ber of items.”

A BEAU­TI­FUL BREAK

“When us­ing dis­pos­able chop­sticks be­fore din­ing, turn the chop­sticks so they are hor­i­zon­tal, and break them so they are per­pen­dic­u­lar to your body. It is much more ap­peal­ing vis­ually.”

CHOP­STICKS ETI­QUETTE

“Pick up chop­sticks in three el­e­gant steps: First, lift up the chop­sticks with the right hand; then, put the left hand un­der the chop­sticks and fi­nally, move the right hand un­der the chop­sticks to sup­port them from be­low.”

START FROM THE LEFT

“Start from the left side of the meal tray and fin­ish with the right side or the front of the tray. Fo­cus on the eat­ing process and try to main­tain the orig­i­nal food styling; it is not ad­vis­able to dis­turb the food place­ments with your chop­sticks.”

BAL­ANCE YOUR EAT­ING

“Don’t fin­ish a sin­gle dish at a time. Paus­ing dur­ing eat­ing is im­por­tant, so take a bite-sized amount of one dish, chew and swal­low it, then move on to the next dish and re­peat. It is con­sid­ered bad man­ners to hover your chop­sticks over food (known as “lost chop­sticks”), to bite the chop­sticks, or to stab the food with the chop­sticks.”
