Cut is dimly-lit, ro­man­tic and in­du­bitably posh. But at­mop­sh­eric set­ting aside, the rea­son most peo­ple find their way here is meat—specif­i­cally, its ex­cel­lent range of steaks.

But there’s no need to plunge straight into the main act. Cut also of­fers some ex­cep­tional starters that de­serve a gan­der. One of these is the bone mar­row flan with mush­room mar­malade and bread, with earthy com­plex flavours.

Of the var­i­ous types of beef avail­able, the Ja­panese wagyu stands out for its rich mar­bling that im­parts an in­cred­i­bly unc­tu­ous mouth feel. The Amer­i­can wagyu is sim­i­larly fatty, but has a milder flavour. For real bang for your buck, go for the USDA prime rib which sports a de­li­cious crust over suc­cu­lently ten­der meat, and paired with side dishes like creamed spinach.

The desserts are as rich and in­dul­gent as the meats. The pan­dan baked alaska is a firm favourite, in­cor­po­rat­ing fa­mil­iar lo­cal flavours to this clas­sic Amer­i­can sweet. Cut into its silky meringue shell and you will find a fra­grant kaya (co­conut-egg jam) flavoured ice cream that will end your meal on a very happy note.
