Sit­u­ated on the 55th and 56th floor of Ion Or­chard, Luke Man­gan’s Salt grill and Sky bar never fails to im­press with its mod­ern Aus­tralian fare tinged with Asian in­flu­ences. Start with tuna tartare mar­i­nated in yuzu-gar­lic soy on crisp fish skin and half a dozen oys­ters dressed in spicy Thai-style nam jim sauce. En­trées are in­ven­tive—savour the Syd­ney crab omelette in miso mus­tard broth with enoki mush­room, se­same and herb; or try the prized Westholme Queens­land scotch steak with zuc­chini, ba­con, parme­san and horse­rad­ish cream.
