Chef Akira Back was a pro­fes­sional snow­boarder be­fore the thrill of the kitchen led him to pur­sue cooking full-time. Af­ter set­ting up es­tab­lish­ments in Las Ve­gas, he ex­panded his brand in Asia by open­ing his epony­mous restau­rant in In­dia and In­done­sia, then in Sin­ga­pore. His must-try dish is the tuna pizza, cooked to a crunchy crust and topped with sliv­ers of fresh tuna, umami aioli and a driz­zle of truf­fle oil.
