Colom­bian chef Fer­nando Arevalo was study­ing to be an en­gi­neer be­fore the “calm in the kitchen chaos” led him to pur­sue a job in the F&B in­dus­try. He trained un­der in­flu­en­tial chefs, in­clud­ing Daniel Boulud and Bill Telepan, be­fore mov­ing to Sin­ga­pore to helm Bis­tecca Tus­can Steak­house and later on, its sister out­let, Artemis. Here, he takes in­spi­ra­tion from sea­sonal in­gre­di­ents and crafts them into Mediter­ranean-in­spired dishes that are unique and de­li­cious. $50-$100/PER­SON 10+ 2 $50/BOT­TLE
