Chef Lai Tong Ping is one of the most passionate individuals you’ll ever meet. The main man at Hai Tien Lo has helped make the restaurant one of the top Cantonese spots in town. When he’s not busy in the restaurant, you’ll find him experimenting with new tastes and ingredients, often putting contemporary twists on classic recipes to create memorable dishes such as the Trio of Treasures and the deep-fried crispy prawns coated with lemon butter sauce. $50-$80/PERSON
