Fans of Peach Garden know that the classic fried carrot cake with XO sauce has been on the group’s menu since it was establishe­d 15 years ago—and deservedly so. What the chefs call the perfect starter, the hearty chunks of carrot cake are tossed in a mixture of omelette, bean sprouts and XO sauce. They cook this dish expertly so that the exterior turns crisp while the inside remains soft, with a sweet-and-savoury tang and strong wok hei flavours. $60-$80/PERSON
