Set on the verdant grounds of the
Singapore Botanic Gardens, this multiawarded restaurant is worth the journey. Chef Jason Tan proffers a contemporary style of cooking he calls “gastro-botanica”, which entails sourcing the best produce that he then transforms in ingenious ways. His technical execution showcases his French training and his plates display an affinity for unusual flavour combinations, as seen in dishes such as the New Zealand blue cod “crispy scales” with chicken wing, maitake, black truffle and haricot coco Paimpol. Set menus reign here, but luckily the progression is measured, with each dish packed with flavour yet not overly heavy. Local influences also make an appearance, as in chef Tan’s signature dessert My Favourite Childhood Food Memory, featuring peanut butter, pandan kaya and toasted bread. All in all, it’s a must-visit and daresay offers one of the best-value tasting courses in Singapore.
