Red House Seafood is synonymous with dishes that celebrate the bounty of the ocean. Mushroom truffle dumplings have an impossibly thin skin that seems to disappear when it enters your mouth, the filling tender and soft with a truffle essence that’s strong and long-lasting, but not overpoweri­ng. Malacca prawns are bathed in a pleasing spicy sauce, one with hints of chilli, zesty lemon rind, lemongrass and the bunga kantan flower used in rojak—it’s a heady concoction that works. Prawns in creamy custard sauce are expertly cooked; they’re enjoyably sweet and salty.
