The fish maw and freshly peeled crab meat soup has a robust stock simmered to a rich, smooth reduction for an intensified flavour. Worth trying are the pot-roasted prawns with glass noodles, slicked in Tao’s signature essence and garlic cloves. Each pot is cooked individually to lock in and enhance the flavour.
