Ash & Elm is a vibrant all-day hotel restaurant focused on European dining, with a charcuterie and cheese room, a wood-fired oven and an open charcoal-grill kitchen. Unusually for a hotel dining room, it displays the characteristics of an independent restaurant that one would find in the more stylish dining enclaves of Singapore— from the interior design and the plating of the food to the Garnier Thiebaut linen and Staub castiron ware on the table. Helmed by a young culinary team led under the capable toque of chef Adrian Chan, the restaurant excels in every course, especially the grilled meats cooked out of the Italian Pira charcoal oven with manuka wood chips. The front-of-house is no less impressive, with attentive servers who appear with a pot of hot water the moment one displays any sign of nippiness from the hotel’s central air-conditioning, as well as refreshing the cutlery for each course. Most all-day restaurants in hotels are a forgettable affair, but not this.
