Yi Yi helms the kitchen, which recently underwent a revamp and expansion. With his relatively large team, Ng produces a hearty Spanish menu that’s ideal for sharing. A meal typically starts with a bowl of deep-fried prawn heads paired with a light, slightly nutty yellow dip made from tomatoes, almonds and walnuts. Must-try dishes include the seasonal burrata and kale salad, which opens your appetite for a paella “Ola”, where the rice is nicely charred and topped with a generous portion of seafood including wild fish, baby calamari and Japanese baby shrimp. Service here is on-point, and starts with chef Chavez personally greeting and checking in on diners if he’s present. The waitstaff are also attentive, even when the restaurant is busy, and are knowledgea­ble about the menu.
