This establishm­ent makes each dining party feel truly special, as most of its tables are in individual dining rooms. While à la carte food items are available, it’s the set menu that boasts the best value with the freshest seasonal products. The appetiser of Hokkaido scallop with mountain yam arrives looking pretty as a picture, and is as delicious as it is beautiful. The braised shredded bird’s nest with fish maw soup is presented with great visual impact—in individual pumpkins, set in a rustic nest of leaves. The soup is a Tóng Lè speciality, as it utilises the master chef’s personal superior soup stock. The lobster is succulent and braised in a complex sauce that’s redolent with seafood flavours, with the aromatic undertones of rich truffle notes. To ensure that we’re truly sated, tenderly poached Wagyu beef slices are served with homemade noodles and a hearty beef broth.
