This fine dining sushi-ya opened in late 2016 with master chef Tomoo Kimura at the helm. Here, the ingredients take pole position. From premium organic vinegar to exclusive awardwinning seaweed, fresh wild-caught seafood to specially imported Hokkaido spring water, chef Kimura sources many of the ingredients himself, and personally cultivates relationships with the suppliers. And this attention to even the most minute of detail certainly shows; his omakase menu (from $450 for Kegani rice) is a dazzling showcase of the very best each season has to offer.
