Here’s a quick and sim­ple way to whip up a gor­geous dessert for un­ex­pected guests. Set aside some of your favourite cook­ies, or in our case, de­li­cious choco­late fudge brown­ies. Dip a sharp knife into hot water, then quickly slice through a pint­sized tub of ice cream cross­wise to cut out discs of ice cream, about 3cm thick each. Sand­wich the ice cream discs be­tween cook­ies or brown­ies to cre­ate the per­fect ice cream sand­wich.
