28 Hong Kong Street has big ideas. Con­ceived as a plat­form to showcase ar­ti­sanal spir­its, Ju­nior serves up a dif­fer­ent theme—in its cock­tails, food and décor — ev­ery six months, much like an art gallery. From now till 31 Jan­uary 2018, it pays homage to the craft and tra­di­tion of au­then­tic agave spir­its.

Ex­pect cock­tails like Raicilla When I See Ya ($22), balanc­ing the smoky, grassy notes of La Ve­nenosa Raicilla Costa de Jalisco with the tangy flavours of Ju­nior’s home­made pas­sion­fruit syrup. Or en­joy tast­ing flights like the Lost Spir­its ($46)—in­clud­ing La Ve­nenosa Sierra de Oc­ci­den­tal, Los Dan­zantes Pechuga, So­tol La Higuera and var­i­ous small bites such as ji­cama sea­soned with tajin, a chilli and lime pow­der sea­son­ing; chilli bak kwa served with parmesan; and or­ange slices paired with sel de gu­sano, an in­trigu­ing salt made from worms.
