A mod­ern twist to Can­tonese clas­sics

Din­ing Place by Chef Heman at Man­darin Gallery is a mod­ern Chi­nese restau­rant com­plete with two pri­vate rooms. Tak­ing over the space that was pre­vi­ously Royal Lon­don Duck, the new restau­rant sports chef Heman Tan’s ce­ramic sculp­tures and table­ware ei­ther de­signed or hand­made by him.

Chef Heman serves up a de­li­cious mod­ern twist of Hong Kong roasted meats and Can­tonese cui­sine here, such as the signature roasted Ir­ish fat duck (from $52 for half) served with duck jus-goma sauce. This dish is ac­com­pa­nied by a plat­ter of pan-fried foie gras gua­camole tartlets served with pip­pets of bal­samic re­duc­tion. To en­joy, pick up a slice of duck and eat it to­gether with a tart­let, squirt­ing on some bal­samic to bal­ance the rich­ness of the duck. For us, just the duck alone, ten­der, crisp-skinned and glis­ten­ing and eaten with a gi­ant dol­lop of duck jus-goma sauce hit the spot.

We also love the pair­ing of chef Heman’s signature es­car­got with gin­ger sauce (from $16.80 for half a dozen), paired with a white ro­jak salad on the side for a com­bi­na­tion of savoury and sweet.

Other must-try dishes in­clude crispy scales co­ral cod fish with hot bean sauce ($21.90 for a sin­gle serv­ing), which is a del­i­cate jux­ta­po­si­tion of crispy skin and fall-apart medal­lions of cod col­lar. There is also the in­no­va­tive crispy roasted pork with hot bal­samic sauce, ly­chee and bal­samic pearl ($23.90). The roasted pork has a light, crispy skin and flavour­ful meat while the hot bal­samic sauce adds just a hint of heat that is com­ple­mented nicely by the sweet ly­chee and bal­samic pearls.

The restau­rant serves a wide range of dishes on its a la carte and all-day dim sum menus. On the a la carte menu, find Chef Heman’s Sig­na­tures such as roasted Ir­ish duck with gua­camole tart­let (from $42 for half), roasted meats, side dishes like herbal prawns ($18.90) and crispy mush­rooms with truf­fle oil

($13.90), nour­ish­ing beauty col­la­gen soups, veg­eta­bles, seafood, meats like Western braised ox­tail Hainanese style

($28.90 sin­gle serv­ing) and rice and noo­dles, in­clud­ing healthy op­tions like chef Heman’s black­berry rice ($13.80 sin­gle serv­ing) and his lux­u­ri­ous Bos­ton lob­ster with bam­boo noo­dles ($78 for 3 to 4 per­sons).
