Op­er­a­tion Dag­ger’s latest mis­sion en­tails new cock­tail and food menus put to­gether by ex­ec­u­tive bar­tender Luke Whearty and his team. Coined ‘Dan­ger­ous Drink­ing Wa­ter’, Op­er­a­tion Dag­ger’s new collection of cock­tails ($25 each) takes on a culi­nary in­flu­ence, mar­ry­ing house­blended spir­its with un­ex­pected in­gre­di­ents. Look for­ward to drinks like the St John cock­tail, a gin-based con­coc­tion show­cas­ing the bold flavours of dis­tilled pars­ley, capers and pars­ley vinai­grette; and Onion Gum, a savoury cock­tail fea­tur­ing sev­eral mem­bers of the onion fam­ily like caramelised leek gin, herb ver­mouth, crispy shal­lots and pick­led onions.
