Fab­u­lous finds for the food lover

Park Ho­tel Clarke Quay’s mod­ern Euro­pean restau­rant, Porta Fine Food & Im­port Com­pany has re­cently added the Ibe­rian Pork Se­creto from Spain to its cat­a­logue of fine pro­duce. Avail­able on its restau­rant menu as well as on the shelves of its re­tail sec­tion, this fine cut of pork comes from the shoul­der blade of pata ne­gra, the high­est grade of Ibe­rian pork. Named Se­creto—mean­ing ‘se­cret’ in Span­ish—the meat is densely mar­bled, ten­der and flavour­ful. Savour Porta’s ren­di­tion com­pris­ing 180 grams of roasted Ibe­rian Pork Se­creto served with a pom­mery honey mus­tard glaze and a side of creamy mash at the restau­rant for $26. But if you’d rather cook it your­self, pur­chase the cut and bring it home.
