Park Hotel Clarke Quay’s modern European restaurant, Porta Fine Food & Import Company has recently added the Iberian Pork Secreto from Spain to its catalogue of fine produce. Available on its restaurant menu as well as on the shelves of its retail section, this fine cut of pork comes from the shoulder blade of pata negra, the highest grade of Iberian pork. Named Secreto—meaning ‘secret’ in Spanish—the meat is densely marbled, tender and flavourful. Savour Porta’s rendition comprising 180 grams of roasted Iberian Pork Secreto served with a pommery honey mustard glaze and a side of creamy mash at the restaurant for $26. But if you’d rather cook it yourself, purchase the cut and bring it home.
