Loyal pa­trons re­turn faith­fully to Nantsut­tei for a taste of chef Ichiro Fu­ruya’s vi­sion of the per­fect ra­men: a time-tested recipe draw­ing the best flavours from his home­town of Hadano, Ja­pan.

Noo­dles come in rich pork bone broth, with aro­matic black gar­lic oil that has be­come Nantsut­tei’s sig­na­ture. This ad­dic­tive flavour is the re­sult of a se­cret recipe that com­bines gar­lic and var­i­ous condi­ments, then is painstak­ingly fried across seven stages.
