Suited smartly in shades of burnt or­ange and teal, Jig­ger & Pony is big­ger, more dap­per and cosier. At its new home in Amara Sin­ga­pore, ban­quette nooks in­vite in­ti­mate con­ver­sa­tions, leather-backed stools make for comfy ses­sions by the counter, and there’s even a mez­za­nine level fit­ted with a sec­ondary bar to ac­com­mo­date mas­ter­classes and guest shifts.

The mag­a­zine-like menu is Jig­ger’s new ve­hi­cle for spread­ing the gospel on the in­flu­ence and rel­e­vance of clas­sic cock­tails. It’s a proper read, witty in de­liv­ery and strewn with his­tory les­sons and trivia on tech­niques and pop­u­lar vari­a­tions. There are sec­tions de­voted to ex­plor­ing all man­ner of mar­ti­nis (cock­tails are uni­formly priced at $23), re-imag­in­ing for­got­ten tip­ples such as Tore­ador and Rob Roy with modernist twists, and even to up­dat­ing Asian cliches with fresh in­gre­di­ents and con­tem­po­rary sen­si­bil­i­ties—fi­nally, a Sin­ga­pore Sling we can be proud of.

Madame Pres­i­dent is a wickedly fun take on the Ne­groni, lo­calised with kaf­fir-in­fused ver­mouth and orchid-and-bit­ter­melon liqueur, and gar­nished with a de­li­cious Cam­pari lolly. Nor is fi­nesse the sole pre­rog­a­tive of fancy drinks. Con­sider the Whisky High­ball, pre­pared mae­wari-style by steep­ing Chita in Hokkaido soft wa­ter be­fore car­bon­a­tion. The re­sult: rounder flavours and tan­ta­lis­ing length. The same care goes into craft­ing so­phis­ti­cated mock­tails, re­ly­ing on zero-proof dis­til­lates, house-made purees and syrups to build flavours, tex­tures and com­plex­ity.
