Suited smartly in shades of burnt orange and teal, Jigger & Pony is bigger, more dapper and cosier. At its new home in Amara Singapore, banquette nooks invite intimate conversations, leather-backed stools make for comfy sessions by the counter, and there’s even a mezzanine level fitted with a secondary bar to accommodate masterclasses and guest shifts.
The magazine-like menu is Jigger’s new vehicle for spreading the gospel on the influence and relevance of classic cocktails. It’s a proper read, witty in delivery and strewn with history lessons and trivia on techniques and popular variations. There are sections devoted to exploring all manner of martinis (cocktails are uniformly priced at $23), re-imagining forgotten tipples such as Toreador and Rob Roy with modernist twists, and even to updating Asian cliches with fresh ingredients and contemporary sensibilities—finally, a Singapore Sling we can be proud of.
Madame President is a wickedly fun take on the Negroni, localised with kaffir-infused vermouth and orchid-and-bittermelon liqueur, and garnished with a delicious Campari lolly. Nor is finesse the sole prerogative of fancy drinks. Consider the Whisky Highball, prepared maewari-style by steeping Chita in Hokkaido soft water before carbonation. The result: rounder flavours and tantalising length. The same care goes into crafting sophisticated mocktails, relying on zero-proof distillates, house-made purees and syrups to build flavours, textures and complexity.
