Fragrant Rice Pudding
Ingredients Golden Peony Thai Premium Hom Mali Rice
130g 120g whole milk 1 tbsp some salt 2 eggs 2 tsp vanilla essence 100g brown sugar 75g raisins some cinnamon powder
Golden Circle Corn Oil Garnishing
400g diced fresh mango 4 strawberries (halved) 8 peppermint leaves
1. Soak rice in water for 30 mins. Rinse and set aside. 2. In a medium flat pan with a thick base, add rice, milk, corn oil and salt. Bring to a boil over high heat, before simmering at low heat to cook rice. Keep stirring to prevent the rice from sticking to the pan. 3. Combine eggs, vanilla essence and brown sugar evenly in a big bowl. Scoop out half of the rice in the pan and add slowly into the egg mixture. Keep stirring. 4. Pour rice-egg mixture into remaining rice. Mix evenly.
Simmer over low heat for 5-10 mins until thick. 5. Remove pan from heat. Add raisins and cinnamon
powder. Combine evenly. 6. Once cooled, transfer into dessert cups. Chill in fridge
for about 4 hrs. 7. Remove and garnish. Serve.
