BBQ Char Siew with Honey

serves 4


900g pork belly, cut into 1.5cm thick slices

BBQ Sauce (mix well)

2 tbsp light soy sauce ½ tbsp dark soy sauce ½ tbsp Cheong Chan cooking caramel dark soya sauce 1½ tbsp fermented black bean sauce 1½ tbsp oyster sauce 2 tbsp hoisin sauce 4 tbsp Chinese cooking wine (Hua Diao Jiu) 1 tbsp sugar

tbsp salt 1 tsp five-spice powder 8 cloves garlic, chopped 1 star anise

Honey Glaze

4 tbsp honey 1 tbsp sugar 3 tbsp water


some coriander leaves


1. Prepare BBQ Sauce: Cook BBQ Sauce in a pot over low heat

until smooth. Leave to cool. 2. Coat pork belly with BBQ Sauce. Chill in fridge and marinate

overnight. 3. Preheat oven to 190°C. 4. Remove pork belly from fridge. Drain away excess sauce. Place pork belly on oven rack. Roast for 20 mins. Flip over and roast for another 20 mins. 5. Prepare Honey Glaze: Add honey, sugar and water

Bring to a boil. Turn to low heat and stir until thick. 6. Set oven temperature at 220°C. Coat pork with Honey Glaze and roast for 5 mins. Repeat this step until roast pork is slightly charred. Slice up char siew and arrange on plate. Garnish with coriander leaves and serve. 7. in a pot.
