• 预热烘炉至170°C。准备脱底烤模:在烤模内均匀涂抹少许油。使用铝箔纸,把烤模(包括底盘)的外部包裹起来,以免水从外渗透到里面。芝士蛋糕烤好后,关掉烘炉,让蛋糕在烘炉内静置45分钟,烘炉的门需要微微打开。把烤模移到架子上,让它完全冷却,待凉后,放入冰箱冷藏至少4小时后才使用。• 如果要制做直径9寸的蛋糕,就需要烘烤45分钟,关掉烘炉后让蛋糕在烘炉内静置1小时30分钟,烘炉的门需微微打开。• Preheat oven to 170°C. To prep springform pans, grease the sides of the pans then wrap the exterior of pans, including the base, in a layer of aluminium foil. This is to prevent water seepage during the water bath. After cheesecakes are baked, switch off the oven and leave cakes to cool for another 45 mins, with the oven door slightly ajar. Transfer pans to a cooling rack and let it cool completely. Refrigerate the cakes for at least 4 hrs or overnight, uncovered. • If making a 9-inch cake, bake for 45 mins. Switch off oven then let it sit for another 1 hr 30 mins, with the door slightly ajar.
