Salad

50g Korean Pear (thinly sliced) 40g fresh orange segments or canned mandarin oranges 10g shredded red pepper 10g shredded carrot 20g edamame, cook and shell 10g shredded cucumber 20g candied orange peel cubed or candied ginger (optional) some salt & pepper

Orange Ginger Salad Dressing

2 tsp lemon zest 60ml orange juice 2 tsp ginger juice 2 tsp lime juice 1 tsp olive oil ½ tsp sugar

Method

1. Mix all Salad Dressing ingredients in a bowl. Chill in fridge before use. 2. Combine all Salad ingredients (except salt & pepper) in

another bowl. 3. Toss lightly salad with chilled Salad Dressing. 4. Add salt and pepper and serve cold.
