Fried Salmon Cubes in Mango Salsa

Ingredients

50g salmon fillet, cut into cubes some salt and pepper 20g plain flour some oil for frying some lettuce cups

Mango Salsa

60g diced mango 20g chopped red pepper 20g chopped green pepper 20g coarsely chopped purple onion

Dressing

6 tsp lime/lemon juice 1 tsp ginger juice 1 tsp sugar 2 tsp extra virgin olive oil salt to taste dash of black pepper

Garnishing

some cherry tomatoes, halved some chopped coriander 1 lime (halved)

Method

1. Combine all Mango Salsa and Dressing ingredients in a bowl. Mix well and chill in fridge for about 10 mins or longer before use. 2. Wash and dry salmon fillet with kitchen towel. Season

with salt and pepper. 3. Coat salmon cubes with some flour and shake off excess

flour. 4. Heat some oil in a pan till very hot before placing salmon cubes into the oil. Lower heat to medium and fry till crusty on both sides. Remove and drain on kitchen towel. 5. Serve with lettuce cups, mango salsa and garnish with

cherry tomatoes, coriander and lime.
