抹茶芝麻芝士蛋糕制做步骤

1)把8片消化饼干放入食物处理机里搅碎至呈现面包屑状态。Pulse 8 digestive biscuits in a food processor until they resemble fine crumbs.

2)加入牛油、糖和盐,继续搅拌至均匀混合。拌入黑白芝麻。Add butter, sugar and salt to biscuit crumbs. Continue to pulse until combined. Stir in the black and white sesame seeds.

3)把饼干混合物铺在烤模的底部。运用汤匙的背部轻轻压至底层平顺。把烤模放入烘炉烤15分钟,至底层变得扎实、金黄。从烘炉取出后,放在托架上待凉。Line the biscuit mixture evenly on to the bottom of the pans. Use the bottom of a spoon to pat it into an even layer. Place pans on a baking sheet. Bake for 15 mins, or until the crust is firm and golden brown. Remove from oven and let the pans cool completely on a wire rack.

4)给搅拌机装上搅拌器,以中速搅拌奶油芝士3分钟,至呈现蓬松的状态。Using a mixer with the whisk attachment, beat cream cheese on medium speed for 3 mins, or until light and fluffy.

5)把面粉和糖混合均匀后,加入搅拌器中,以低速把用料混合均匀。In a bowl, whisk flour and sugar to combine. Add flour and sugar mixture to cream cheese, then beat on low speed until well mixed.

6)加入优格和香草精,混合均匀。Add yogurt and vanilla extract, and mix until smooth.

7)加入鸡蛋,每次1个,继续搅拌至均匀。小贴士:如果芝士混合物看起来有点颗粒状,可以过筛使之变得滑顺。Add eggs, one at a time, mixing until just combined. TIP Sift the cream cheese mixture if it looks lumpy.

8)把芝士混合物均匀分配在两个碗内,分别加入黑芝麻粉和抹茶粉。搅拌均匀。Distribute cream cheese filling into 2 bowls. Add black sesame powder to one and matcha powder to the other. Stir well to combine.

9)把黑芝麻奶油芝士铺在饼干底层之上。Pour black sesame-cream cheese mixture evenly among the pans with crust.

10) 接着铺上抹茶奶油芝士,然后把烤模放入深的烤盘里。Add another layer of matchacream cheese filling then place pans inside a deep roasting pan.

11) 在烤盘里倒入滚水,至水位到达烤模的一半高度。放入预热至170°C的烘炉中烤18-20分钟。Fill the roasting pan with boiling water, until the halfway mark of the springform pans. Bake at 170°C for 18-20 mins.

12) 利用刀子,轻轻助蛋糕脱模。在蛋糕上面撒上抹茶粉,再加上芝麻牛轧糖或芝麻饼干装饰即可。With a knife, gently unmould the cakes from the pans. Dust the cake with matcha powder. Top with sesame nougatine or sesame cookies before serving.
