BEST FOR A slice of modern Pretorian food and hospitalit­y. FOOD The menu is fairly extensive to cater for their varied clientèle, but highlights include a delicious starter of crumbed crocodile with smoked crocodile carpaccio, pickled celery and tamarind dressing. Another favourite is the duo of smoked snoek: a snoek cake with a snoek cigar and cucumber spaghetti. For mains, a 500g prime rib with Cape Malay sauce, deep-fried biltong and vegetables is ideal to share. Desserts include a delicious blond chocolate ganache tart with Earl Grey tea streusel and berry sorbet. DRINKS The wine offers well-chosen examples of all the styles and varietals of South African wines. There’s a comprehens­ive selection of champagnes and other bubblies. SERVICE Attentive.
