This is serious comfort food. It takes no time to prepare and stays in the oven for
quite a while so you can bang it in and forget about it.
800g courgettes 1 onion, roughly sliced 1 handful thyme sprigs 1 head garlic, cloves peeled
250ml cream 100g butter, broken into pieces
salt and pepper
1. Preheat the oven to 150°C. 2. Cut the courgettes into quarters down the middle. 3. Lay the onion, courgettes, thyme and garlic in a lasagne or casserole dish, mix
well and then press down. 4. Dot butter over the top of the dish and cover with cream. 5. Place in the oven, uncovered, for approximately one and a half hours.
Serve hot. Note: If you want some extra goodness, before you serve it, give it a layer of
grated cheese on top and pop it back under the grill for a cheesy crust.
