This is se­ri­ous com­fort food. It takes no time to pre­pare and stays in the oven for

quite a while so you can bang it in and for­get about it.

800g cour­gettes 1 onion, roughly sliced 1 hand­ful thyme sprigs 1 head gar­lic, cloves peeled

250ml cream 100g but­ter, bro­ken into pieces

salt and pep­per

1. Pre­heat the oven to 150°C. 2. Cut the cour­gettes into quar­ters down the mid­dle. 3. Lay the onion, cour­gettes, thyme and gar­lic in a lasagne or casse­role dish, mix

well and then press down. 4. Dot but­ter over the top of the dish and cover with cream. 5. Place in the oven, un­cov­ered, for ap­prox­i­mately one and a half hours.

Serve hot. Note: If you want some ex­tra good­ness, be­fore you serve it, give it a layer of

grated cheese on top and pop it back un­der the grill for a cheesy crust.
