2Healthy egg and chips (250 calo­ries) for fast days: IN­GRE­DI­ENTS 500g sweet pota­toes, diced 1 onion, sliced 1 tbsp olive oil 2 tsp dried crushed oregano or 1 tsp fresh oregano 200g mush­rooms 4 eggs METHOD Heat oven to 200°C. Tip the sweet pota­toes and onions into a large, non­stick roast­ing tin, driz­zle with the oil, sprin­kle the oregano on top, then mix ev­ery­thing to­gether well. Bake for 40 to 45 min­utes (or un­til start­ing to go brown), add the mush­rooms, then cook for a fur­ther 10 min­utes un­til the pota­toes are browned and ten­der.

Make four gaps in the veg­eta­bles and crack an egg into each space. Re­turn to the oven for three to four min­utes or un­til the eggs are cooked to your lik­ing.
