2Healthy egg and chips (250 calories) for fast days: INGREDIENTS 500g sweet potatoes, diced 1 onion, sliced 1 tbsp olive oil 2 tsp dried crushed oregano or 1 tsp fresh oregano 200g mushrooms 4 eggs METHOD Heat oven to 200°C. Tip the sweet potatoes and onions into a large, nonstick roasting tin, drizzle with the oil, sprinkle the oregano on top, then mix everything together well. Bake for 40 to 45 minutes (or until starting to go brown), add the mushrooms, then cook for a further 10 minutes until the potatoes are browned and tender.
Make four gaps in the vegetables and crack an egg into each space. Return to the oven for three to four minutes or until the eggs are cooked to your liking.
